Chicken Tortilla Soup

I’m a big fan of chicken tortilla soup. I love the medley of spices and flavors all topped with cheese and tortilla strips, I mean really – what could be better?! I decided to try making it on my own and was pleasantly surprised with the outcome. The best part was that it was so simple to make, I just let the crockpot do all the cooking. At the end of the day, we had a delicious warm soup to enjoy and had plenty of left overs for the next day.

Cooking Time: 4 hours (Crock-pot on High)

Ingredients:

  • 5 Cups of Chicken broth
  • 1 Can diced tomatoes (drained)
  • 1 Can black beans, drained and rinsed (or dark kidney beans)
  • 1 Cup of corn (drained and rinsed)
  • 1 Serano chili minced
  • 3/4 cup finely chopped yellow onion
  • 1 tbs of minced garlic
  • 2 1/2 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 3/4 tsp paprika
  • 1 1/2 lbs cooked shredded chicken breasts (cooked with Mrs. Dash Fiesta Lime seasoning and salt & pepper)
  • 1/2 cup of fresh cilantro chopped
  • 1 lime (juice squeezed)
  • Garlic salt (for taste)
  • Pepper (for taste)
  • 1 1/2 Cups of Tortilla Chips/Strips (and extra for topping)
  • Monterrey Jack shredded cheese

Directions:

  1. Cook chicken and then shred with forks and set aside
  2. In the crockpot add: Chicken stock, shredded chicken, diced tomatoes, black beans, diced onion, corn, chopped cilantro, chili powder, cumin, paprika, garlic salt, pepper and lime juice – pretty much all ingredients except for tortilla chips and cheese
  3. Stir ingredients together occasionally
  4. Cook on high for 3-4 hours
  5. Before serving add in the cup and a half of tortilla chips and stir and allow to sit for a couple minutes before serving
  6. When serving add shredded cheese on top & enjoy!

Chicken Tortilla Soup Spices

TIPS: Don’t over season with salt as chicken broth contains salt and garlic salt is potent. The tortilla chips added in the end will also add a touch of salt. Be sure to include the tortilla chips prior to serving and stir. Include extra tortilla chips to top and/or top with avocado as well.
