  While I love cooking, I don’t always have the time or energy to cook a full dinner during the weekday. So in efforts to cut down on cooking time and overspending on ordering out, I’ve been cooking ahead to make meals that last us for a couple days. Acai Bowls are hugely popular here in California and Hawaii (Anything fresh and healthy is usually an automatic hit in these areas). Originally from Brazil, Acai is considered a “superfruit” because it’s loaded with antioxidants. If you’ve never had an Acai Bowl, it’s similar to a smoothie/sorbet consistency that’s then topped with fresh fruit, granola or any of your favorite toppings (chai seeds, almond butter, honey…etc).
